When I was a child, my mother would make these chocolates for Christmas. Not her exact recipe but so far the closest (I think). I entered it to calculate the NI for the base (without the extract). She made different flavours with different extracts (orange, cherry, lemon) - Just don't forget the add the NI. She never flattened them, but left them as little balls. Some she even packed the mixture around a marischino cherry and then dipped in chocolate. We always looked forward to Christmas. Ingredients

1 cup smashed potatoes (no butter or milk)
1 tsp salt
2 T melted butter
2 tsp extract (i.e. peppermint, orange, maple)
8 cups icing sugar
8 1oz squares semi sweet chocolate
2 T shortening
Directions
Makes 48 treats
Mix together the smashed potatoes, salt, butter, and extract flavouring.
Gradually mix in icing sugar; mix in enough to make 6 to 8 cups of workable dough.
Knead slightly, and roll into balls. Leave as balls or flatten to make patties.
Arrange on sheets of wax paper, and allow to dry overnight.
Heat chocolate squares and shortening in a microwave-stir occasionally -until melted and smooth.
Working quickly, dip the balls or patties in the melted chocolate, and let cool on wax paper.
