Ingredients

1 C. Sugar or Splenda for baking
1 C. Butter,unsalted, soften
1 Lg. Egg
2 1/4 C flour. Higher alititude increase flour to 2 1/3 cups
1 tsp. Cinnamon
Powder Sugar
1 Tbsp. (96) miniature semisweet chocolate chips
48 Red cinnamon candies
Directions
Makes 48 cookies. To ensure these cookies hold thier shape in the oven, work only with a small portion of the dough at a time and keep the rest in the refirdgerater
1. In a large bowl combine , sugar, and butter; beat until light and fluffy. Add the egg; beat well. Add the flour and cinnamon; blend well. Cover dough with plastic wrap; refridgerate 1 hour for easier handling.
2. Heat oven to 350. For each cookie, shape dough into a 1 in. ball, place 2 inches apart on ungeased cookie sheets. Flatten slightly. Shape dough into 3 (1/4 in.) balls. Place 2 of the balls above and touching larger ball for ears and place 1 ball on to to resemble a snout. flatten slightly.
3. Bake cookies for 11-15 min or until firm to touch. Immediately remove from cookie sheets. Lightly sprinkle with powder sugar. Press 2 chocolate chips into each cookie for eyes and 1 cinnamon candy for nose.
