Introduction

This was my first time using soy crumbles and I was really surprised that I liked this! The serving size is quite generous too. You can have 2 salad cups per serving! Ingredients

    8 6-in corn tortillas
    Nonstick cooking spray
    1 medium onion, chopped
    1 clove garlic, minced
    1 Tbsp canola oil or Enova
    12 oz (1½ cups) soy burger crumbles
    1 Tbsp cider vinegar
    8 ozcan no-salt added tomato sauce
    1 tsp ground cumin
    1/4 tsp crushed red pepper
    4 cups shredded lettuce
    1/4 cup shredded reduced fat cheddar or cheddar flavored soy cheese shreds
    12 cherry tomatoes, quartered or 1 cup chopped fresh tomatoes
    Salsa, optional

Directions

For tortilla bowls: Wrap tortillas in foil.Warm in a 350° oven for 10 minutes. Coat eight 10 oz custard cups with nonstick cooking spray. Lightly coat both sides of each tortilla with nonstick spray. Carefully press 1 tortilla into each cup. Bake 20 minutes or until golden and crisp. Remove from custard cups and cool on a wire rack.
Meanwhile in a large skillet cook onion and garlic in hot oil until tender.
Stir in soy burger crumbles, tomato sauce, vinegar, cumin and crushed red pepper. Bring to a boil; reduce heat. Simmer, uncovered, 5 minutes or until desired consistency.
Place tortillas on 4 serving plates. Fill with lettuce, tehn spoon soy crumbles mixture on top. Sprinkle with cheese and tomatoes. Add salsa if desired. Makes 4 servings(2 tortilla cups per serving).
