Ingredients

    1 Tbsp. Olive Oil
    Yellow Bell Pepper, diced
    Orange Bell Pepper, diced
    Zucchini, diced
    1 tsp. Garlic (or two cloves, minced)
    Garlic and Onion Powder to taste
    1 14.5 oz can Italian Diced Tomatoes
    1 6oz. can Tuna packed in water, drained
    1 Tbsp Capers, drained
    1/4 Cup Swanson's Natural Goodness Chicken Broth

Directions

Heat skillet w/ 1 Tbsp Olive Oil. Saute bell peppers over medium low heat. Add zucchini. When veggies begin to soften, add 1 tsp. garlic (or two cloves), and onion and garlic powder to taste. After this has cooked down and combined, add 1 can of diced tomatoes seasoned with Italian seasoning. Drain one 6 oz can of tuna packed in water and add to sauce. Add 1 Tbsp of capers. Cook down. If addtional liquid is needed, add chicken broth.

Yummy served over pasta.
