Introduction

This is my family's favorite crockpot recipe and it's so easy! I microwave a bag of frozen broccoli florets to go with. I also buy a loaf of french bread on my way home from work and my family has beef sandwiches. This is my family's favorite crockpot recipe and it's so easy! Number of Servings: 12

Ingredients

    4 lbs. Bottom Round beef
    2 cans beef broth
    2 pkgs. Lipton Onion Soup mix
    1 lg onion- sliced
    2 red peppers- sliced

    If you want sandwiches, serve with some crusty french bread.

Directions

Makes 12 1-cup servings. This is approximate, and if anything, it makes more. I usually freeze half.

Slice the onions and peppers into strips and place on the bottom of the crockpot (you can use a bag of frozen pepper strips if you want to save time). Trim the fat from the beef and cut the roast into 3 or 4 strips (it will be easier to shred when it's done). Sprinkle 2 packages of Lipton's Onion Soup mix over the beef. Add 2 cans of beef broth, but leave some of the dry mix on top of the beef. Cook on low for 8-10 hours. Prior to serving, shred the beef using two forks.

    Very Easy and tasty. Some of us used buns while many of us just ate the beef with yellow mustard. Yummy! I didn't have red peppers...they would have added some nice flavor. - 1/20/09
