Ingredients

    1 can of salt free black beans, undrained
    1 can of pinto beans, undrained
    1/2 cup of salsa
    4 tablespoons fat free sour cream
    1.5 servings of tortilla chips, divided
    4 tablespoons chopped onion
    1 tsp vegetable oil
    .5 cup tomatoes, diced
    1.5 oz cheddar cheese, grated
    1 tbsp taco seasoning
    1 tsp chili powder
    1/4 tsp ground red pepper
    salt and pepper to taste

    4 servings

Directions

Pour beans and salsa into a pan, add spices, and simmer on medium. Meanwhile, fry the onions in vegetable oil until clear, and dice tomatoes. Add to beans, and simmer 10 minutes, stirring often.

Add half of soup to a blender, and puree. Pour it back into the rest of the soup, stir, and pour into 4 bowls.

Garnish with cheese, sour cream, tortilla chips, and extra salsa, if you'd like. Enjoy! :)
