Ingredients

    2 Pork loin steaks (80 grams each)
    Mushrooms, fresh, 100 grams
    Leeks, 100 grams
    Onions, raw, 25 grams
    Spinach, fresh, 200 grams
    Olive Oil, 10rams (i.e two teaspoons full)
    *Soy Sauce, .25 tsp
    Garlic, 7 cloves chopped
    White Rice, long grain, 170 grams
    Yogurt, plain, low fat, 45 grams
    whole grain mustard, 1 tbsp
    Pepper, black, 1 dash

Directions

Boil the rice in the usual way until cooked.

Mix one teaspoon of the Olive Oil, the Soy Sauce, Pepper and chopped Garlic and rub into the pork steaks and pan fry in a non-stick pan until cooked to your preference. Set aside on kitchen paper to drain and keep warm.

Wash and cut the mushrooms, onions and leeks, spread out onto a baking tray add the other teaspoonful of olive oil and rub all together until evenly coated. Sprinkle a little water over all with seasoning of your choice and bake for 5 to 10 minutes until tender. Remove from oven and throw the spinach on top and mix all well. Put all this mixture into the frying pan with the pork residue, add mustard, chilli if desired, and the yogurt and stir on medium heat until well mixed and the spinach has wilted down a little. Plate up with half the rice on each of two plates as a bed, lay on each a pork steak then cover each with half of the mixed vegetables. Serve and eat immediately!
