Introduction

I modified my sister's traditional Holiday Cake recipe for lower sugar carbs to fit our diet - I substituted 1 cup bran for the second cup of sugar the recipe called for. (I might try 1 cup applesauce + 1 cup bran next time instead of any sugar.)

Ingredients

    Cake:
    2 cups flour (1 white, 1 wheat)
    1 cup sugar
    1 cup bran
    4 eggs
    3 c grated apples
    1/2 c raisins
    1/2 c walnuts
    1 t vanilla
    2 t cinnamon
    1/2 t salt
    1 t baking powder
    1 t baking soda

    Frosting:
    1/2 c chopped pecans
    1 box powdered sugar (or to taste)
    8 oz cream cheese
    1 stick butter or margerine
    1 t vanilla

Directions

Grate apples with the skin. Mix dry ingredients including apples. Add eggs and vanilla; blend well. Pour into a greased bundt pan. Bake 50 minutes at 350 or until toothpick comes out clean.

Frosting: Cream stick of butter and 8 oz cream cheese. Add powdered sugar to taste and 1 tsp vanilla extract. Add chopped pecans last or put on top of frosted cake. Drain the cherries on paper towels. Frost cake when cool. Arrange cherries on top.
