Ingredients

Black Bean Cakes:
16 oz package of dry black beans, prepared per package directions, rinsed, and drained
4 Tbsp butter, softened
4 Tbsp chopped cilantro
4 Tbsp chopped shallots
4 cloves garlic, minced
2 Tbsp Creole seasoning, divided
1-1/2 cup breadcrumbs, divided
2 eggs, divided
1/4 cup canola oil for frying
Salt and pepper, to taste
Lime Spiced Mayo:
1 cup soy mayonnaise
1 Tbsp lime juice
1 jalapeņo pepper, minced
Salt and pepper, to taste
Directions
Preheat oven to 300 degrees F. Dry the beans as much as you can by spreading them out on paper towels. Bake on a sheet pan for 20 minutes. Cool before proceeding.
In a food processor, combine the butter, cilantro, onions, garlic, 1 Tbsp Creole seasoning (or to taste), 1/2 cup breadcrumbs, salt, and pepper. Add to beans along with 1 egg. Refrigerate for 1 to 2 hours. Now would be a good time to prepare the Lime Spiced Mayo.
Form bean mixture into 10 patties. They should be slightly flatter than a hockey puck. Combine 1 egg and 2 Tbsp water in a shallow dish. Combine 1 cup breadcrumbs, 1 Tbsp Creole seasoning (or to taste), salt, and pepper in another shallow dish. Dip each patty in egg, then coat with breadcrumbs.
Fry in batches 4 minutes on each side. Drain on paper towels.
Serve with guacamole and Lime Spiced Mayo.
