Ingredients

    Soyrizo, Vegan Chorizo, 5 oz , casing removed
    Potato, with skin, 1 large, diced
    Onions, raw, 1 cup, chopped
    Bell peppers, 1 cup, chopped
    Carrots, raw, 1/2 cup, chopped
    Celery, raw, 1/2 cup, diced
    Cabbage, fresh, 1/2 cup, chopped
    Vegetable Broth, 3 cup
    Tomatoes with green chilies, 1 can undrained
    Cilantro to garnish

Directions

Saute onions, carrots, celery and peppers in a small amount of broth until soft. Add in everything else and boil for 20 minutes. Garnish with cilantro.
Makes 8 small (1 1/4 cup) appetizer or 4 full bowl servings.

    Good
    I used sweet potato and didn't have any cabbage. The soyrizo flavor didn't seem to penetrate into the soup like I had hoped so next time I will try to crumble it instead of just slicing it. - 9/18/09
