Number of Servings: 3


    - About 8oz chicken breasts, whole
    - 1 TBSP olive oil
    - 1/2 cup Trader Joe's Tomato & Roasted Red Bell Pepper Soup
    - 1/4 cup white wine
    - 4 small-medium tomatoes, chopped roughly
    - Garlic, about 8 cloves (you can use less if you like it less strong), chopped finely
    - 1 TBSP chopped chives, mostly for garnish


1. Heat large pan and add olive oil. Cook chicken until slightly browned.
2. Add garlic and tomatoes, let cook for about a minute.
3. Add soup, white wine, and chives.
4. Lower temperature, cover, and let simmer until sauce is thickened. If the sauce seems too thick, add a little water and cook it down some more.
