Introduction

A yummy soup that isn't cream based! Could probably leave out the bacon if you really wanted to. A yummy soup that isn't cream based! Could probably leave out the bacon if you really wanted to.
Number of Servings: 6

Ingredients

    8 slices of bacon
    1 large onion
    10 baby carrots
    2 stalks celery
    5.3 cups chicken stock
    4 large potatoes
    cayenne to taste
    salt to taste
    pepper to taste
    cheddar cheese to add to the soup/on top as a garnish/not at all it's up to you.

Directions

First cook all of your bacon and set aside to drain.
Dice the onion, carrots, celery, and potatoes. Add all ingredients, including bacon, into large pot of chicken stock and bring to a boil. Once at a boil, simmer for 30-45 minutes. Sometimes I add the cheese to the soup, sometimes I add a little on top, and sometimes I leave the cheese out all together, it is all about preference. Add seasonings to taste. Enjoy.
