Introduction

This is my favorite breakfast, it is easy and delicious and good for you. I personally dont love eggs so i make it with one egg for myself and two for my husband who prefers a traditional "scramble". (note calories and serving is based on one egg per serving). Additionally, i make this with a meatless sausage pattie. i love real sausage, but i really love these as well (and i can feel better about!)I usually add a sprinkle of whatever kind of shredded cheese i have in the fridge but have left that out of the ingredients and caloric calculations. Ingredients

    1 tsp olive oil

    .25 Cup of yellow onion, chopped (can also use red onion if you prefer)

    .25 Cup of yellpw pepper, chopped

    .25 Cup of red pepper, chopped

    1 Morningstar farm sausage pattie (note this is meatless but delicious!)

    1 medium size egg, beaten

Directions

heat olive oil in large skillet

add onions and sautee until almost clear, add salt if desired

add red and yellow pepper, mix and continue to sautee.

in the meantime, microwave sausage pattie, about 1 minute. After heated, shred with a fork to acheive a sausge crumble and add to pan. Continue to sautee until peppers are preferred tenderness

beat 1 egg in sep. bowl then pour over veggie, sausage mixture and mix until egg is cooked.
