I make a huge batch of this so I freeze it. I usually do cup measurements then I can grab these for lunch at work with a veggie or fruit. I make a huge batch of this so I freeze it. I usually do cup measurements then I can grab these for lunch at work with a veggie or fruit.

Ingredients

    6 cups chopped fresh mushrooms
    3 small onion, chopped
    6 cups chicken broth
    1/ 2 cup or 8 TBL of Smart Balance, melted
    1/2 cup and 1 tablespoon all-purpose flour
    4-1/2 cups 2% milk
    1-1/2 cups half & half
    3 pinches salt and pepper to taste

Directions

# In a large saucepan, combine the mushrooms, onion and chicken broth. Bring to a boil, then simmer covered for 15 minutes over low heat.
# Stir together the melted butter and flour to make a paste. Stir the paste into the pan with the vegetables. Increase the heat to medium, and gradually stir in the milk. Continue stirring constantly.
# When the mixture thickens and begins to boil, stir in the cream. Cook over low heat without boiling for about 10 minutes, or until the mushrooms are tender. Season with salt and pepper.

Makes 12 servings=319 calorie
