Ingredients

    *Dole Pineapple Tidbits 100% Pineapple juice, 1 cup (remove)
    1 T. cornstarch
    *Kikkoman Lite Soy Sauce, 2 tbsp (remove)
    Brown Sugar, 1 tsp packed (remove)
    1/4 - 1/2 tsp. crushed red pepper flakes
    Pork Tenderloin, 6 oz (remove)
    *Canola Oil, 1 tbsp (remove)
    Green Peppers (bell peppers), 1 cup, strips (remove)
    Broccoli, fresh, 2 cup, chopped (remove)
    Carrots, raw, 1 cup, strips or slices (remove)
    Water chestnuts, 0.5 cup slices (remove)

Directions

Drain pineapple but reserve juice. In a bowl whisk together cornstarch, red pepper flakes, brown sugar, pineapple juice with water added to make 1 C. and soy sauce. Put oil in non-stick pan or wok and heat over high heat. Add pork tenderloin(sliced into strips or cubes) and stir-fry until browned and cooked through. Remove pork from pan. Add all veggies and stir-fry until tender. Add pineapple and stir in sauce. Cook, stirring, until thickened. Serve as is or over brown rice.
