Introduction

Ingredients

    1/2 cup minute rice
    1/2 cup frozen mixed veggies
    1 egg
    1 tbsp olive oil
    1/2 tbsp lite soy sauce
    few dashes of ground ginger
    few dashes of black pepper

Directions

1. Cook rice according to package directions

2. Add frozen veggies to a bowl with a little water and cook for about 30 seconds to soften while cooking.

3. Add olive oil to a large pan, add egg and scramble. When egg is almost completely cooked, add veggies, rice, soy sauce, ginger and pepper.

4. Cook until all liquid is absorbed from pan and the rice starts to fry. (About 3-5 minutes)

5. Enjoy!

    Very good recipe. I didn't have ground ginger and therefore it was a little bland. I added some lemon juice and perfecto! - 3/25/09
