Ingredients

    1 head cabbage
    15 mushrooms, sliced
    15 baby carrots, sliced
    1 acorn squash, cut into cubes
    2 medium zucchini, sliced
    2 leeks, white part sliced
    2 medium tomatoes, diced
    2 cups cooked brown rice
    1 can black beans
    1 yellow onion, chopped
    .5 cups okra
    1 cup broccoli
    1 cup cauliflower
    4.5 cups water or veggie broth

Directions

Spray a large soup pot with non-stick cooking spray. Start the soup by 'sauteeing' the onions, mushrooms, carrots, and 2 TBSP water for about 5 minutes, until onions are just translucent. Add all the other ingredients except for zucchini, broccoli, cauliflower, and okra. Bring to a boil, and add zucchini, broccoli, cauliflower, and okra. Simmer until tender.
