Introduction
Protein powered quick & easy chilled chicken salad. Serve over a bed of crunchy romaine, or tangy mixed baby greens. Also great rolled into a whole grain tortilla wrap. Ingredients

Chicken breast, canned- 1 can
Yogurt, plain nonfat-1 cup
Grapes, seedless- 1 cup
Red onion, chopped- 1/4 cup
Radishes, chopped- 2-3
Celery, chopped- 1 large stalk
Pecans, chopped- 1/4 cup
Soy protein powder- 1 scoop
Cilantro, fresh, chopped- 3 tbsp
Juice of 1/2 lemon
Mustard, dry powder-1 tsp
Black pepper- to taste
Directions
In large bowl, combine chicken, grapes, celery, onions, and radishes. Toss to mix & separate chicken chunks.
For dressing:
In separate bowl, mix yogurt, soy protein powder, cilantro, lemon juice, mustard powder & black pepper. Mix well, adding water to thin the mixture to a thick creamy dressing consistency.
Pour over chicken mixture. ***may not need all of dressing, do not over dress.
Add pecans and toss. Refrigerate until well chilled, serve over bed of crunchy romaine, or tangy mixed baby greens, or inside a whole-grain tortilla.
