i figured out that I am NOT eating enought protein. I was watching Big Daddys House and he made a similar omelet. I meant to use only one whole egg but sometimes eggs do not cooperate when you try to seperate them! ::-( i figured out that I am NOT eating enought protein. Ingredients

    Egg, fresh, 2 large (remove)
    *Egg white, 5 serving (remove)
    *Dole Baby Spinach Salad, 5 oz (remove)
    *Peppers, sweet, red, fresh, 1 small (remove)
    Zucchini, baby, 1 large (remove)
    Onions, raw, 0.50 medium (2-1/2" dia) (remove)
    Garlic, 2 cloves (remove)
    Cheddar Cheese, 2 oz (remove)
    *Extra Virgin Olive Oil, 2 tbsp (remove)
    Butter, salted, 1 pat (1" sq, 1/3" high) (remove)
    Thyme, fresh, 1 tsp (remove)

Directions

Saute vegetables in evoo. Whip eggs and egg whites with salt pepper and thyme. Add eggs to begetables. Grate cheese on top and bake at 350 for about 20 minutes or until set.

    Sounds really good. Don't have zucchini on hand so will substitute green bell pepper. Also won't use the butter and reduce the Evoo to two teaspoons...too much fat! - 3/24/09

    Do what you have to. EVOO is a good fat and doesn't bother me. if it bothers you . . . do what you want. Original recipe as I said is at Food Network.com under Big Daddy's house.

    this was excellent. i used half the amount of spinach, and doubled the amount of zuchini. next time, i'll use a better quality cheese. but i'm definately making it again-- it was so easy! - 2/18/09
