Introduction

Extremely Easy to make, low fat, good source of protein, good way to eat legumes, freezes well... what else do you want?
Can be eaten on its own, with brown rice, in tacos (but the taco shell are not very healthy). I often make a double recipe and whenever I don't know what to prepare for dinner, I unfreeze a portion.
For pot-luck parties, you can serve chili as a kind of a dip with scoop tortilla chips (while the chips are not very healthy, the chili will fill you up and you won't eat too much chips),

Ingredients

    2 teaspoon Olive Oil
    1 Onion (medium)
    400g. Ground Beef (lean)
    28 oz Can Diced Tomatoes
    14 oz Can Red Kidney Beans (rinsed & drained
    0.5 cup Salsa (no sugar added)

Directions

Makes 4 entrées serving (about 1.25 cup each)

- In a large skillet, at medium temperature, stir the onion in olive oil until tender.
- Add the ground beef and stir until in tiny pieces and cooked (as you would for a spaghetti sauce for example).
- Add the Red Kidney Beans (rinsed and drained)
- Add the Tomatoes (with the juice)
- Add Salsa (I used medium Salsa)

Bring to a boil then on low heat let simmer for at least 30 minutes (60 minutes or more is better). I often serve dinner after 30 minutes and I let the remaining Chili on low heat for another 30-60 minutes).
