Ingredients

1-1/2 Cups Brussels Sprouts, cooked & halved
1 Cup Cherry Tomatos, halved
2 Cans Solid White Tuna packed in water, drained
1 Small Can Spinach, do not drain
2 Cups Baby Portabella Mushrooms, halved
2 Tbsp Olive Oil
2 Tbsp Parmesan Cheese, grated
Directions
Heat Olive OIl in large frying pan on med-high heat.
Halve all the veggies and drain the tuna.
Saute the mushrooms & Brussels sprouts first.
Add the tomato halves, the whole can of spinach (including the liquid), and the tuna fish. Give the ingredients a stir while breaking up the tuna fish.
Cook for about 5-10 minutes (until bubbling and completely heated through).
Divide into two servings and top with 1 Tbsp Parmesan cheese each. Add salt & pepper to taste.
