Ingredients

    1 c. quick oats
    1.5 c. apple juice
    1 1/2 c. all-purpose flour
    1/2 c. toasted wheat germ
    1. shredded, sweetened coconut, divided
    2 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp salt
    1 c. packed brown sugar
    1/2 c. unsweetened applesauce
    2 c. grated carrots
    2 eggs, lightly beaten

Directions

1. Preheat oven to 350. Grease a 13x9" pan.
2. In microwave-safe bowl, combine oatmeal and apple juice.
3. Combine flour, wheat germ, 1/2 c. coconut, baking powder, baking soda, and salt. In separate bowl, combine brown sugar, applesauce, carrots, and eggs. Fold into flour mixture. Add oatmeal micture and stir until just blended.
4. Spoon into baking dish. Springle with remaining 1/4 c. coconut. Bake 50-50 minutes, until toothpick inserted in center comes out clean. Cool and cut into bars. Serves 18.

    Very Good
    I Made this today. I will use more coconut next time I make this, to make it sweeter. I noticed that I didn't use a cup of coconut, b/c according to the instructions-use .75 of a cup but it's listed as a 1 cup in the ingredients. - 11/10/09
