These tasty, little morsels are regularly served on the streets of Brazil with shrimp and hot sauce. This low-fat, low-calorie, vegan version tastes like a potato latke crossed with a hushpuppy and makes for a great, portable lunch or snack. Ingredients

    1 lb dried blackeyed peas, soaked overnight
    1 large onion, roughly chopped
    1 tsp tabasco sauce
    1/2 tsp salt
    1/2 tsp pepper
    1/2 tsp garlic powder
    1/2 tsp onion powder
    6 tbsp olive oil

Directions

Sort through the beans to eliminate any rocks and soak overnight, changing the water once. Drain the beans and puree them with the onion in a food processor until smooth. Stir in the spices and adjust them to taste. Add a dash of cayenne pepper if you like it really spicy. Heat the oil in a large pan on medium-high heat and drop the batter by ladle full to form hamburger-sized cakes. Brown thoroughly on both sides and drain on paper towels. Serve piping hot with sour cream or plain yogurt, if desired.
