Introduction

I got this recipe off of RecipeZaar.com. According to the recipe description there, this recipe was from a 1995 or 1996 National Enquirer. It was posted on 'Zaar by Spyder-man. I did make a few minor modifications (I didn't add green peppers or shallots and made some other adjustments).

I don't believe the Cabbage Soup Diet is a great diet to follow, however, this is a really good soup for snacking or lunch. It reminds me of the Cabbage Soup they serve at Big Boy. Also, I halved the recipe and it still made a TON of soup - - roughly 20 servings.

Ingredients

    1/2 head cabbage, diced
    3 onions, diced
    1/2 bunch celery, diced
    2 chicken bouillon cubes
    1 (1 1/4 ounce) envelope dry onion soup mix (like Lipton's)
    24 ounces V8 vegetable juice
    1 (28 ounce) can diced tomatoes
    juice of half a lemon
    pepper to taste
    2 cups water (approximately)
    4 garlic cloves, crushed

Directions

Place all ingredients (except water) in a large stock pot and bring to a boil.

Reduce heat and simmer for 1 hour.

At this time, if the soup is too thick for you, add in the water. I added in 2 cups, you can add more to thin further. Let heat through.

    Original recipe 1 cabbage, 6 onions, 1 bunch celery, 1 bunch green onions, 48 oz. V8, 6 crushed garlic cloves, 2 green peppers + the rest above. Original makes 20 servings (takes two pots until veggies cook down) - best to freeze & have leftovers! I make w/o onion soup mix - 7/15/13

    Good soup but shouldn't have a vegetarian tag with the chicken involved. I used vegetable stock cubes instead. - 8/7/11

    My husband and I are on a Daniel Fast and I've been looking for good and filling recipes to try where we won't feel so deprived. This sounds like a realy good one; Have all the ingredients @ home and can't wait to try it out tonight! - 1/18/11
