Introduction

Great for Weight Loss Surgery patients with a small serving size of one cup. Includes finely ground beef, protein rich beans, and spicy Rotel tomatoes and chiles. Ingredients

    1 16oz container of Ground Chuck
    1 cup raw chopped white onion
    1 can Kidney beans
    1 can Northern beans
    2 cans chunky Rotel
    1 can Black beans
    1 can Mexican corn
    1 quart beef stock
    4 Cups of Water
    2 packets Taco seasoning (I used Taco Bell Chipotle)

Directions

Brown ground chuck and onion together. Drain if needed. Throw into crock pot and add all of the other ingredients. I used the Rotel juices, but drained the juice out of everything else. I added the stock and water after all of the solids were combined and then added the taco seasoning.



I put the crock pot on high and cooked for 3 hours. Then, I switched it over to low until ready to eat. If you'll be leaving in the morning, put it on low all day long. My crock pot is a true slow cooker, so you may have to adjust heating times.
