Ingredients

8 oz Fat Free Cream Cheese, softened
    1/2 cup chopped green onions
    6 TBSP chopped black olives
1 container of Hormel dried beef
    Low Carb tortillas

Directions

Whip softened cream cheese with a mixer.

Coarsely chop green onions, then put into a food processor to finely chop. Add to whipped cream cheese.

Add chopped black olives to mixture (I use already chopped canned olives instead of fresh).

Quarter dried beef rounds on a cutting board and throw into the food processor to finely chop them. Add to cream cheese mixture and mix everything together with a mixer until uniformly mixed.

Take one tortilla and evenly spread some of the mixture on top of it. Start to roll from one end to the other, like a burrito or jelly roll. Do other 3 tortillas the same way. Pop them into the freezer for about 5 minutes so they will be easier to slice.

Once cool and hardened a bit, take them out of the freezer and evenly slice them vertically with a warm knife. I could get 7 even slices out of this recipe and smaller low carb tortillas.

Recipe yields 4 whole tortilla rollups and 7 pinwheel slices for 28 small pinwheels in all. Make sure to keep cool because of the cream cheese.

Try substituting the olives to keep the carb count even lower or use full fat cream cheese and large flour tortillas if you're not watching your weight or doing them for a party appetizer!
