Ingredients

    3 med potatoes, chopped
    1/4 c red bell peppers chopped
    1/4 c green peppers chopped
    2 cups onion, sliced
    1/2 c canned diced tomatoes
    1 Tbs olive oil
    Lawry salt to taste

Directions

First, carmelize onions in a very hot pan. Place in a bowl and set aside. Cook potatoes in olive oil until tender with Lawry salt. Add all other ingredients and sautee until peppers are tender.
