Fantastic substitute for the real thing! I used smart balance instead of I Can't Believe without a problem. I didn't have the lemon extract on hand and I would definitely use it next time as I like lemon bars to be quite tart. Dusted with just a touch of confectioners sugar after cool - outstanding! - 3/29/09

This recipe is great exactly as it is! I love lemon bars and these make it ok to eat one or two! (Grinded rind is to grate the outside rind of the lemon & juice 1/3 of the lemon by squeezing 1/3 of a lemon) The splenda with a small amount of sugar works wonderfully. Great recipe-it's a keeper! - 7/14/10

I would like to try the recipe, but I don't use artificial sweeteners like splenda. The upset my stomach. If someone has modified the recipe I would like to hear it. - 7/14/10
