Ingredients

Filling:
* Egg Beaters, original - 1/2 cup
* *Splenda, 1/2 cup
* Granulated Sugar, 1/4 cup
* Lemon Juice, Real Lemon, 1/3 cup
* *Flour, white, 1 Tbsp
* Lemon Extract, 1/2 tsp
* Lemons, 1/3 LG, juiced and grinded rind
*Sliced Almonds, 2 Tbsp (goes on the top)
Crust:
Flour, white, 1/3 cup
Oats, 1/4 cup
Chopped Almonds, 1/3 cup + 1.5 Tbsp
I Can't Believe It's Not Butter Light, 5 Tbsp
Splenda, 4 Tbsp
Directions
Preheat oven to 350°F. Grease an 8x6-inch baking dish.
Combine crust ingredients in a large bowl on low speed of an electric mixer until mixture is crumbly. Press mixture evenly into pan.
Bake 20 minutes or until light brown; remove from oven.
Beat together filling ingredients in a medium bowl until well blended; pour mixture evenly over warm baked crust.
Sprinkle almonds on top.
Return to oven and continue baking for 15 to 20 minutes longer or until filling is set and bars are brown around the edges. Cool completely on a wire rack. Cut into bars.
Makes 16 servings.

Fantastic substitute for the real thing! I used smart balance instead of I Can't Believe without a problem. I didn't have the lemon extract on hand and I would definitely use it next time as I like lemon bars to be quite tart. Dusted with just a touch of confectioners sugar after cool - outstanding! - 3/29/09

This recipe is great exactly as it is! I love lemon bars and these make it ok to eat one or two! (Grinded rind is to grate the outside rind of the lemon & juice 1/3 of the lemon by squeezing 1/3 of a lemon) The splenda with a small amount of sugar works wonderfully. Great recipe-it's a keeper! - 7/14/10
