    1 cup cornmeal
    1 cup flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 1/4 cups skim milk
    2 large egg whites, lightly beaten

1Preheat your oven to 400 degrees and spray an 8x8 (or 9x9) inch pan with cooking spray and set aside.
2In a bowl mix the cornmeal, flour, baking powder, and salt.
3Add the milk and the egg whites, stirring just until combined.
4Pour into the pan and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.

    Incredible!
    I did add 1/4 c of sugar for a little sweetness and it was awesome. My husband said it was so much better than Cracker Barrel. :) - 2/8/11
