Ingredients

    1 T. Olive Oil
    1 Large Onion, diced
    4 c. Chicken Broth
    2 14 1/2 oz. cans diced tomatoes with juice
    1 19 oz can chickpeas, drained and rinced
    1/2 c. long grain brown rice
    1/2 t. Ground Cunin
    1/2 t. dried thyme leaves
    2 c. cubed butternut squash
    2 c. cooked, cubed turkey
    1/3 c. Simply Jif peanut butter
    1/4 - 1/2 t. crushed red pepper flakes
    lime wedges and chopped fresh cilantro to accompany soup when serving.

Directions

In a large stock pot heat olive oil over medium-high heat. Add diced onion and saute until translucent and tender, about 10 minutes.

Add broth, tomatoes and their juice, sweet potatoes, chickpeas, rice, cumin, and thyme. Bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.

Add red pepper flakes, squash, and turkey. Cover and continue to simmer another 30 minutes.

Stir in peanut butter. Serve with lime wedges and celantro for people to add as desired.

    I loved this. I did not put the pepper flakes in because I don't like hot or spicy and it was delicious just the way I made it. - 6/4/19
