Introduction

A healthier twist on this down home southern favorite. By taking out most of the sugar and fat but keeping the intense banana flavor and creamy pudding, this is a treat that finds its way onto my dinner table many times a month! Ingredients

    2 boxes Sugar Free/Fat Free Banana Creme
    Pudding (Vanilla can be substituted)
    4 cups Skim milk
    1 tub Fat Free Cool Whip
    4 small Ripe bananas
    32 Reduced fat Nilla wafers, crushed

Directions

In a very large bowl, combine milk and both boxes pudding mix. Whip with wisk until totally combined. Let stand for 2 minutes until pudding begins to set. While pudding is setting, crush nilla wafers to a semi fine consistency. I usually put the wafers in a ziplock bag and use a kitchen mallet to crush them so they don't turn into a fine powder, the way they will if you use your food processor. When your pudding has started to set, take a spatula and gently fold cool whip into pudding. Do not over mix or the cool whip will break down. Sprinkle a fine layer of crumbs in the bottom of a 13x9in pan and then layer in pudding mixture. Thinly slice some bananas on top of pudding mixture and then sprinkle nilla wafer crumbs over banana slices. Repeat layers ending with pudding and crumbs ending on top. This is best made at least a couple of hours before you are going to serve so the flavors can mix together, but after your family tries it for the first time, you will have to hide it so they don't go digging into it before it has the chance to set up!
This makes 16 servings, and at just over 100 calories, it's a treat that will leave you with all the flavor and zero guilt!
