This is an adaptation of the Muffin in a Minute recipe. This is an adaptation of the Muffin in a Minute recipe.
Number of Servings: 1


    1 Egg
    1 Tsp Olive Oil or butter
    1 Tsp Cinnamon
    1/2 Tsp Baking powder
    1 Splenda Packet
    1/4 cup Flax Seed Meal
    1 Tbsp Natural Apple Sauce
    1/4 cup chopped Walnuts


Makes 1 serving

Wisk egg, apple sauce and oil.
Stir dry ingredients together.
Mix wet with dry. Mix well and add walnuts.
Spray mug/small bowl with nonstick spray
Microwave until done, between 40 seconds and 1 minute. Watch closely.
It should slide out of the cup but I ate mine out of the bowl.
