Ingredients

1 T. olive oil
1 large onion, chopped
1 28 oz can diced tomatoes with juices
2 13.75 oz can quartered artichoke hearts, drained
3/4 c. white wine
4 T. capers, drained and chopped
1 T. dijon mustard
1 T. minced fresh dill or basil or oregano
Directions
Heat olive oil in a large skillet over medium heat. Add onion and saute until translucent and tender, about 8 minutes.
Add all other ingredients except dill. Increase heat to medium-high. Cook stirring frequently about 10 minutes until most of liquid has evaporated. Remove from heat and stir in dill or whatever herb you are using.
Serve on top of chicken, fish, beef, shrimp, or toss with pasta.
