Ingredients

    medium onion chopped
    2 tsp garlic
    1/2 pound ground turkey breast
    1 tbsp olive oil
    1 packet Ortega Taco Seasoning
    1-15oz can black beans
    1-14.5 oz can diced tomatoes
    1 cups brown rice
    4 bell peppers
    1/2 cup reduced fat cheddar cheese

Directions

Preheat oven to 375.
Cut tops off of peppers and place in baking dish.
Add oil to skillet and saute onion. Add garlic.
Brown turkey then add taco seasoning. At the same time prepare rice according to package instructions.
When meat and taco seasoning have combined add can of tomatoes and black beans.
Combine meat mixture in a bowl with rice.
Stuff meat and rice mixture into peppers.
Place a small amount of water in bottom of baking dish and cover with tinfoil.
Bake for 45 minutes then remove cover and bake for additional ten. Add cheese and bake until bubbly. Makes 6 servings.

    This was good, although I added some Medium salsa and doubled the garlic. - 4/9/09
