Ingredients

1.5 pound russet potatoes
3/4 cup frozen peas
1/2 tsp ground cumin
1/2 tsp turmeric
1/4 tsp cayenne pepper
1/2 tsp salt
Fresh Ground Black Pepper
1 tbl minced cilantro
1-Easy Pie Crust Recipe
Olive Oil
Directions
-Spray muffin tins with cooking spray and set aside
-Quarter potatoes and boil till tender. Meanwhile cook peas according to package directions.
-Drain potatoes. Add cumin, turmeric, cayenne, salt, and pepper to taste. Coarsely mash (keep slightly chunky) Add peas and cilantro and set aside to cool
-Make "Easy Vegan Pie crust" or any vegan pie crust. Separate into 18 equally pieces about the size of a walnut.
- Work each piece individually, Roll out each piece into 5" circles. Put a 1.5 tbls in the center and gather up ends to seal. Use water on your finger to lightly moisen edges to stick.
-Put the samosa in a tin and repeat until tins are filled.
-Brush with olive oil and bake for 25 minutes until golden brown.
