Ingredients

    4 oz mixed mushrooms
    1lb beef chuck cubed
    5 cups beef broth
    1 cup onion chopped
    1 cup celery chopped
    1 cup carrot chopped
    1/2 cup pearled barley, raw
    1 tbsp extra virgin olive oil

Directions

In a large sauce pan heat 1 tbsp extra virgin olive oil. Brown beef chuck and set aside
Saute onion, celery, mushrooms and carrots until onion turns translucent.
Add broth, reduce heat and simmer for 1 hour.
Add barley and simmer for 20 min or until barley is done.

Makes 8 1-cup servings
