Introduction

This is meatloaf with some added veggies it tastes amazing! You can substitue with ground turkey for less calories, great with cauliflower mashed potatoes. Ingredients

    Ground beef, extra lean, 16 oz
    *Ketchup, Heinz, 10 tbsp
    Onions, raw, .25 cup, chopped
    Garlic, 2 tsp
    Saltine Crackers, fat free (Saltines), 10
    Oregano, ground, 1 tbsp or italian seasoning is better
    Zucchini, .50 cup, grated
    Carrots, raw, .25 cup, grated
    Parmesan Cheese, grated, 3 tbsp
    Egg Beaters, original, 1/4 cup

Directions

Mix all ingredients except set aside 2 tbsp of ketchup for the top of meatloaf later.
After mixing place in baking dish, cover with foil, then put in 375 degree oven four a hour, after 1 hour uncover and drisel the remailing ketchup on top, place back in oven for 15-20 more minuets, then enjoy with some fresh green beans and cauliflower mashed potatoes!

    I have to watch my sodium so I tried this with salt free ketchup for half the sodium. The salt on the saltines and in the parmesan is plenty. I left out the Zucchini because I just don't like Zucchini, but added mushrooms. Sounds odd but it was delicious! - 1/16/09
