Introduction

I modified a recipe found here on spark people to meet my needs - I'm cooking for one, so I don't need 4 or 5 extra servings as left overs in the fridge. This is surprisingly filling. Ingredients

    one half of a large head of cabbage sliced relatively thin
    1 large apple ( I used pink lady) cored and chopped, leave the skin for additional nutrition.
    1 Tablespoon brown sugar
    2 Tablespoons rice vinegar
    1 Tablespoon butter
    1 small onion chopped
    a couple grinds of salt or 1/4 teaspoon

Directions

Cut a large cabbage in half and slice it relatively thin.
Chop one small yellow onion.
Melt one tablespoon butter in a large skillet.
Add the onion and begin to cook on medium high heat. When it begins to soften add the cabbage and cover, turn down heat slightly so that the cabbage will steam/saute for 10 to 15 minutes.
Meanwhile, core and roughly chop your apple.
Stir your cabbage a couple times to rotate it around the pan. After the 15 minutes add the apples on top and stir. Cook another 10 minutes, stirring every few minutes. Cabbage should be crisp tender and apples soft. I split what was in the skillet in half for two night's dinners.
I had it as a side to leftover baked ham cubed and heated with a little bbq sauce on it. Easy, tasty and filling.
