Introduction

My all-time favorite meal! I cut WAY back on the oil and butter to make it more diet-friendly. For this dish, I prefer regular pasta, but you can make a healthier version by subbing in whole wheat pasta.
Slow roasted tomatoes in the oven with a little garlic and olive oil and serve over your favorite pasta.

Ingredients

    Red Ripe Tomatoes, 2 cup cherry tomatoes
    Olive Oil, 1 1tsp (remove)
    Garlic, 3 clove (remove)
    italian seasonings
    salt and pepper
    Sun dried tomatoes (just a few chopped up)
    2 cups uncooked pasta

Directions

Toss tomatoes in baking dish with all ingredients except pasta. Roast for 1 hour. cook pasta as directed, rinse and toss with roasted tomatoes. Serve hot and chill leftovers for an awesome cold pasta salad.
