Introduction

This is a very tasty, lowfat chili. I could not find chipotle chili's on the ingredient list, so I ommited it, however I would recommend adding about 3 tbsp of chopped chipotle chili, to add a nice smokey flavor without to much heat, if you want more heat add more, they can be found in almost any grocery store in the mexican food isle. Ingredients

    16 oz. 99% fat free ground turkey
    1 cup chopped carrot
    1 cup chopped onion
    1 cup chopped celery
    1 cup chopped broccoli
    2 cups cubed eggplant(optional)
    .5 cup frozen yellow corn
    3 cans kidney beans
    3/5 tbsp chopped chipotle chili
    1 tbsp chili powder
    2 tbsp garlic powder
    salt and pepper to taste

Directions

Add olive oil to soup pot and sweat mirapoix until onion is translusent, add broccoli, eggplant, and corn, and a little water or chicken stock and simmer. Spray a frying pan with PAM or what ever spray product you use and cook your turkey until slightly browned, add to vegetable mixture and then add beans and seasoning, and chopped chili's, mix well and let simmer until hot and flavorful. Makes about 10 generous bowls.
