Ingredients

2 cups whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1 TBS. brown sugar
3 large eggs
2 cups soy milk
2 TBS. extra virgin olive oil
Directions
Makes 8 - 2/3 cup pancakes (I made them large so they would be done faster. You can make smaller and adjust calorie count easy enough.)
*In small bowl, combine eggs,soy milk and oil.
*In larger bowl. sift flour, baking powder, salt, and
brown sugar.
*Add wet ingredients to dry ingredients until just blended. Cook on greased griddle or frying pan.
I use the 2/3 measuring cup as my ladle so all pancakes are the same size.

Excellent basic recipe. Salt can be reduced to 1/4 tsp, and I used canola oil. - 3/12/09

ANJULIE2 Thanks for trying my recipe.I will also add less salt next time as well. The calorie count for olive oil and canola oil are similar. Is there a flavor difference? I never used that oil.
