Introduction
This seems like a lot of fat, but it's the good kind.This recipe is my father-in-law's legacy. He called it a Caesar salad and we usually do too, but some people quibble that since it has no raw egg, yadda yadda. Anyway, it's just about our favorite food. Sometimes we have it as a meal unto itself. This is our trademark pot-luck dish. Romaine is such a sturdy lettuce, any leftovers are good the next day too. This seems like a lot of fat, but it's the good kind.

Anyway, it's just about our favorite food. Sometimes we have it as a meal unto itself. This is our trademark pot-luck dish. Romaine is such a sturdy lettuce, any leftovers are good the next day too.

Ingredients

One head Romaine lettuce
1/2 cup olive oil
3 tsp Worcestershire Sauce
5 or 6 cloves garlic
1/2 a 2 oz. can of anchovies in olive oil
1 tsp salt
1 tsp pepper
parmesan cheese

Directions
Rub the inside of a large salad bowl with a clove of garlic.
Pour the 1/2 cup of Extra Virgin Olive Oil into a small bowl.
Crush the desired number of garlic gloves into the cup.
Add Worcestershire sauce.
Finely chop anchovies and add to bowl.
Add salt and pepper.
Mix well with a fork. Place the cup in the fridge for dressing to chill while you prepare the lettuce (chilling the dressing helps it "stick" to the lettuce better.)
Wash and dry the Romaine well. Tear leaves into small, bite-sized pieces and place in prepared bowl. (Fred was a stickler for small pieces -- okay, I cheat and just buy it pre-washed and pre-torn in bags!)
Pour dressing over lettuce and toss to coat all those little pieces. Add parmesan and croutons and toss again.
Enjoy! It's great with pasta, or soup, or a steak...or just a good loaf of crusty bread and a glass of wine.
