Introduction

This is a great way to use up leftover rice and assorted veggies. Great with toast for breakfast or dinner. Ingredients

    1 tsp. bacon grease
    1/2 cup frozen spinach, thawed
    1 cup chopped celery
    1 cup chopped green pepper
    1/4 cup chopped scallions
    1/4 tsp. Nature's Seasons
    1 cup cooked white rice
    4 large eggs, beaten
    1/4 cup plain lowfat yogurt
    1/2 cup shredded cheddar cheese
    2 tsp. grated parmesan cheese
    Tabasco green pepper sauce (optional)

Directions

Saute vegetables and seasoning in bacon grease on medium heat until tender. Add rice to heat. Stir in eggs, yogurt and cheddar. Continue cooking, stirring frequently to prevent burning, until eggs are firm scrambled. Top with parmesan and pepper sauce. Makes 4 servings.
