Ingredients

    2 Frozen or fresh pie shells
    400 ml low fat ricotta
    I package frozen spinach
    2 egges
    1.5 oz sharp cheddar
    1 small onion
    garlic to taste

Directions

saute onions and garlic
add spinach
stir into ricotta and beaten eggs
pour into pie shells
top with fat free sour cream
