Ingredients

    2 Tbsp olive oil
    1 lb stew beef
    1 onion
    8 cloves garlic
    10 cups veggie broth
    3 beets
    1 cup chopped carrots
    4 stalks celery, chopped
    2 cups potato, chopped,
    4 cups red cabbage, chopped

Directions

Brown the beef, onions, and garlic. Then, add all other ingredients and simmer for 2 hours. That's it! If you want, you can add fresh dill at the end, and for an extra treat, add a dollop of sour cream on top. This will fill you up and is full of good nutrients!
