Number of Servings: 4

Ingredients

    4 - Skinless, boneless Chicken Breasts
    1C - raw, baby spinach, chopped
    1C - mixed red and green peppes, chopped
    1/4C - fresh mushrooms, chopped
    1/2C - yellow onion, chopped
    1/2C - Salsa
    1/2C - 1% fat cottage cheese
    1/2 C low fat cheddar cheese, shredded

Directions

Makes 4 servings.

Place chicken breasts in an oven dish.
Chop al veggies and layer on top of chicken.
Mix salsa and cottage cheese in a bowl and layer on top of veggies.
Bake at 350F for 45 minutes.
Sprinkle cheddar chesese and bake for an additional 5 minutes.
