Ingredients

12 Corn Tortillas
1 can of fat free refried beans
1 package of Tyson Fajita Grilled Chicken Strips
1 cup of raw or frozen onions
1 cup of raw or frozen green peppers
1 package of Kraft fat free cheddar cheese
2 cans of Red Enchilada Sauce (mild)
Directions
Makes 6 servings (2 enchiladas per serving)
Spray non-stick spray in an oblong pryrex dish.
Spread a thin layer of fat free refried beans on a corn tortilla. Lay on a plate and add one line of fajita grilled (pre-cooked) chicken and a tablespoon each of the chopped up onion and green peppers. Sprinkle about 1 tablespoon of fat free cheddar cheese and then roll up and place in pyrex dish. After rolling up all twelve enchiladas pour two cans of red mild enchilada sauce over the top of the enchiladas. Sprinkle fat free cheese over the top of th enchiladas. Bake in a pre-heated oven at 350 degrees for 1 hour.
