Introduction

Ingredients

4 4-oz skinless, boneless chicken breasts
2 Tbs balsamic vinegar
½ tsp ground thyme
2 tsp olive oil
1 Tbs + 1 ½ tsp all-purpose flour
½ tsp ground oregano
1 cup fat-free milk
1 cup broccoli
1/3 cup feta cheese
1 tsp lemon juice
2 cups hot orzo or rice
Directions
On sheet of wax paper, sprinkle the chicken with vinegar and thyme
In a large, nonstick pan, heat oil.
Cook the chicken until browned and cooked through, about 4-5 minutes on each side.
Transfer to plate.
Sprinkle flour and oregano over pan juices.
Cook, stirring constantly, for 1 minute.
Gradually, whisk in milk.
Cook, whisking constantly, until think and bubbley—2-3 minutes.
Stir in broccoli, feta, and lemon juice.
Reduce heat and simmer until cheese melts—about 2 minutes.
Place the orzo on a large platter and top with chicken.
Spoon sauce over chicken.
