Introduction

This is adapted to meet mine and my husband's taste, but it is originally from the WW cookbook This is adapted to meet mine and my husband's taste, but it is originally from the WW cookbook
Number of Servings: 4

Ingredients

    4 4-oz skinless, boneless chicken breasts
    2 Tbs balsamic vinegar
    ½ tsp ground thyme
    2 tsp olive oil
    1 Tbs + 1 ½ tsp all-purpose flour
    ½ tsp ground oregano
    1 cup fat-free milk
    1 cup broccoli
    1/3 cup feta cheese
    1 tsp lemon juice
    2 cups hot orzo or rice

Directions

On sheet of wax paper, sprinkle the chicken with vinegar and thyme
In a large, nonstick pan, heat oil.
Cook the chicken until browned and cooked through, about 4-5 minutes on each side.
Transfer to plate.
Sprinkle flour and oregano over pan juices.
Cook, stirring constantly, for 1 minute.
Gradually, whisk in milk.
Cook, whisking constantly, until think and bubbley—2-3 minutes.
Stir in broccoli, feta, and lemon juice.
Reduce heat and simmer until cheese melts—about 2 minutes.
Place the orzo on a large platter and top with chicken.
Spoon sauce over chicken.
