Side dish best served along side roast beef and gravy.
My daughter loves these woud just as soon skip the roast beef and eat hers with roasted sweet potatoes and dark gravy.

Number of Servings: 6

Ingredients

    1 c white flour
    1 c 1% milk
    4 eggs
    1 tbs, shortening for greasing the inside of the muffin tin.

    This will make 6 large portions in an extra large muffin pan. If making smaller portions adjust your cooking time.

Directions

Pre heat oven and greased muffin tin to 425 degrees farenheight.

Beat eggs then add milk and continue beating. Add flour to liquid a bit at a time and contine beating until mixture is smooth.
Pour batter into preheated muffin tins yo 3/4 full and bake @ 425 for 10 minutes, Reduce oven tempertaure to 350 degrees and continue baking until tops are a medium to deep golden brown. approx 7-10 minutes.
We like these moist and spongy, cooking longer will make a dryer crisper version.
DO NOT open oven door during baking
