Introduction

These are thin, beautiful cookies that I have taken out the sugar and added Xylitol. You can get it at most health food stores or at www.naturessunshineproducts.com at wholesale. This is a sugar replacement that has no glychemic index, is safe for diabetics, and is actually good for your teeth. It measures like sugar and has no after-taste. I highly recomend it! These cookies are always a favorite for any occassion.

Ingredients

    1/2 C. butter
    3/4 C. Xylitol
    1 egg, beaten
    1 C. quick-cooking rolled oats
    1 tbsp. flour
    1 teasp baking powder

Directions

Cream butter and sugar. Add egg and oats. Mix flour and baking powder and add to other ingredients. Drop by teaspoonfulls onto greased and floured cookie sheet 2" apart. Spread each to a thin round wafer not over 2" in diameter. Bake in moderate oven (375*F.) about 10 minuets. While still hot, remove from pan and quickly shape over rolling pin. (I skip this step)... Makes about 2 1/2 dozen- 2-3 cookies per serving

    I made this but added spices (a pinch of nutmeg, a tsp of cinnamon) to increase flavor. I also added 1/2 of whole wheat flour to add more dry ingredients to counter the xylitol. My boyfriend loved them! But the gastro-intestinal gas was more than expected. Limit your intake or use less xylitol. - 4/5/09
